Hi there! Today I have a very simple and delicious salad with grilled Halloumi Cheese. Halloumi is a traditional cheese from Cyprus Island and I think that it's the best cheese for grilling. I'm sure that if you decide to make this salad you won't be disappointed.
You can find halloumi cheese in grocery stores, it's not so hard to find. If you do try it out, tell me what you think of it! Just don't forget to grill it!
Ingredients
1 / 2 cup of bulgur soaked in to water for 2 hours
1 bunch parsley, finely chopped
1 / 2 cup fresh mint chopped
3 spring onions chopped
1 tomato, seeded and cut into chunks
1 yellow bell pepper cut into strips
1 orange bell pepper cut into strips
2 slices of halloumi cheese
Juice from 1 / 2 lemon
4 tablespoons extra virgin olive oil
Salt - Pepper
1 teaspoon roasted sesame seeds to serve
Directions
Soak the bulgur in plenty of water for 2 hours. Drain and place it on a salad bowl. Add the chopped parsley, mint, spring onions, tomatoes, lemon juice, add some salt and pepper, olive oil and stir.
Using a hot grill, add the peppers and grill until soften. Remove the peppers and add them to the salad.
Place the cheese on the griller and cook it until it gets golden brown. Add the grilled cheese on top of the salad and sprinkle with sesame seeds .. Serve warm
