Chocolate Fudge Ice Cream Sandwich with Cherry Syrup




You cant imagine how hot it is here in Toronto these last few days! Seriously I left  Greece hoping that I will escape from that heat, came to Canada and it’s even worst!
So, Ice cream time, yes, but let’s do a twist and make it decadent enough..
You can use a simple vanilla ice cream or any flavor that you think it will suit your taste buds.
Just consider that the ice cream changes colour by the cherries..

Ingredients

1 cup pitted cherries cut in two
2 tablespoons sugar
Cherry syrup
Juice from 1/2 lemon
5 tablespoons sugar
1 cup pitted cherries cut in two
Fudge
1/2 cup sugar
3/4 cup butter
225 g dark chocolate
2 eggs 
1/2 cup milk
1 cup flour mixed with a pinch of salt


How to make


Using a bowl add one cup of chopped cherries, mix with sugar and set aside.


Preheat oven to 350 degrees.
Melt in double boiler the chocolate with the butter. Remove the bowl from the double boiler and add the sugar, stir, add the eggs one at a time, stirring vigorously.


Cover a baking sheet with parchment paper and add the fudge mixture. Use a spatula to spread evenly in the pan.


 Bake for 13 to 17 minutes or until when a toothpick inserted in the centre comes out clean. Allow to cool 10 minutes in the pan and completely cool on a rack. When the fudge is cool, cut in half so you’ll have two pieces.
Choose a freeze proof pan that fits your fudge and lay the first layer. Soften the Ice cream and fold in the cherries.Spread the Ice cream and cover with the second piece of the fudge cake. Cover with foil or with an airtight lid and put in the freezer for at least 2 hours before serving.
Remove from the freezer 5 – 10 minutes before cutting and serving.
Let’s make the cherry syrup. Place a saucepan over medium heat add the lemon juice with sugar and when that comes to a boil add the cherries. Stir and skim the foam as much as you can. Boil for 15 minutes. Set aside


Serve the Ice cream sandwiches with the cherry syrup
