Happy New Year and the most easy apple pie!

Happy New Year!!! How are you, did you enjoyed the holidays? Well we sure did, we had a wonderful time with our friends here in Toronto and Niagara. Unfortunately we didn't see any snow for Christmas this year but either way it was fun. Best wishes to you all, I hope that 2012 will be a great year for all the people in the world and especially people in Greece who are getting through hard times these days.
Today I have the most easy apple pie recipe for you, it's just a whole apple sprinkled with cinnamon, filled with walnuts and raisins, covered with puff pastry and baked. Delicious and perfect for a cold weeknight!

Ingredients ( 4 apples)

4 small apples
1 package butter puff pastry
4 tablespoons melted butter
4 teaspoons granulated sugar
1 teaspoon ground cinnamon
1 / 3 teaspoon ground cloves
1 / 2 cup chopped walnuts
1 / 3 cup raisins
1 egg beaten with a little milk
For the cinnamon glaze
1 cup powdered sugar
2 tablespoons milk
1 teaspoon cinnamon

How to make

Preheat the oven to 340 degrees.
Use a bowl and add the sugar with the cinnamon, cloves, walnuts and raisins.
Rinse and patted dry the apples.
Using a thin knife or the special tool, remove the center of the apple, the stem and seeds.
Brush the apples with some melted butter and sprinkle with the cinnamon and sugar mixture.
Cover a baking dish with parchment paper and lay the puff pastry.
Cut round discs much bigger than the apple and place the apple in the center of the puff pastry discs. Fill the centre of the fruit with the mixture of cinnamon, sugar, raisins and walnuts.
Close the pastry by folding all sides. Use a knife and open some small holes on top of the pastry, brush with the egg-milk mixture and bake for 50 minutes.
Allow to cool before serving. Drizzle with the glaze.
For the glaze just whisk all the ingredients together.

Have a great day!
