Hello there friends, 5 days until Christmas!!!
We've been busy this weekend, there was no time to rest, but we had a very good time.
We went to 2 Christmas Parties and one birthday Party! We had a blast! Lets go to the recipe and I'll tell you more about last nights Christmas Party with a meetup group called "Foodies of Toronto".
Todays recipe is a simple colourful salad with an interesting and delicious blue cheese vinaigrette..
Necessities
Various green leafy vegetables (salad, lettuce, arugula, spinach)
1 medium ripe avocado, cut into pieces
1 medium ripe pear, cut into pieces
1/2 English cucumber cut into slices
1 orange bell pepper cut into sticks
1/3 cup hazelnuts
A little sweet paprika
For the vinaigrette
40 g blue cheese
3 tablespoons extra virgin olive oil
2 tablespoons of yoghurt
2 tablespoons white vinegar (you may need more)
Salt - Pepper
How to make
In a mixing bowl, whisk together the yoghurt with the vinegar, add the blue cheese (reserve some for garnish) and gently fold in using a rubber spatula. Add the olive oil and whisk all the ingredients untill smooth. Refrigerate for at least one hour or up to 2 days.
Put all the greens, avocado, pear, cucumber, bell pepper in a salad bowl, drizzle with the vinaigrette, toss, add the hazelnuts, the reserved blue cheese and drizzle with the dressing..

Christmas Party with the "Foodies of Toronto"
So last night I went for the very first time to a Christmas Party that was organized by a meetup group called "Foodies of Toronto" and it was so much fun! In this group there are people who love food, cooking and well.. sharing!!
I made my Beef Pie that I hope everyone enjoyed, and traditional Greek Christmas Cookies..
The food was delicious and people were so friendly and outgoing, I really had a great time!
