How are you, are you shopping for Christmas, decorating, baking?
I love the pre-Christmas time the same as I love Christmas and New Years Eve!
Since i became a mom, I truly enjoy decorating, baking, watching Christmas movies and all these things.. This kid changed my life for sure :)
Today I have a famous Italian - American Soup, simple and broth-like with tasty chicken meatballs, carrots, spinach, corn and orzo. The most easiest, nourishing, colourful and joyful soup so perfect on a cold cloudy day..
Ingredients
500 g ground chicken
1 onion finely chopped
2 tablespoons of parsley
1/2 cup grated parmesan cheese
1/2 cup breadcrumbs
1 egg
3 tablespoons water
4 cups chicken broth
1 sprig of thyme
2-3 carrots, sliced
2/3 cup canned corn
2 stalks celery chopped
1/2 cup spinach leaves
1/2 cup orzo (you can replace it with rice)
Olive oil
The juice of one lemon
Salt - Pepper
Directions
Using a food processor chop the onion with the parsley. Add the mixture to a bowl and add the ground meat, cheese, bread crumbs, egg, water, salt and pepper and stir to mix them all together. Grease your hands with some olive oil and roll small meatballs. Lay them on parchment paper.
Place a big pot over medium-high heat and add the broth with carrots, celery, thyme and corn. Bring to a boil, reduce heat to low and using a spoon add the meatballs to the pot. Simmer for 10 minutes, cleaning the pot from foams. Add the pasta and simmer for 15 minutes more. Add salt and pepper and turn the heat off. Before serving add some chopped spinach leaves and drizzle with the lemon juice.
