Do you like cooked onions? I think that cooked onions are the most delicious thing in the whole world! Seriously. They're so full of flavour and sweet!
This is the favourite dish of my childhood. There is nothing else in the world that can make me go back, in just a second. The moment I smell and taste this dish, I can almost hear my grandmothers voice, see the big table inside the kitchen and imagine taking my place in the usual chair.. Is there something else that can beat food for its ability to bring back in memory so many soulful little things?

Ingredients
10 large onions, cut into thick slices
8 chicken drumsticks
2 bay leaves
5 allspice
5 black peppercorns
2 tablespoons white vinegar
1 tablespoon tomato paste
5 tablespoons olive oil

How to make
Coat a pan with 2 tablespoons of olive oil and place over medium heat. When the oil is hot, lay the chicken in the pan. Brown for 3-5 minutes on each side, until the outside is nicely browned. Remove the chicken to a side platter.
To the drippings in the pan, add 2 tablespoons of olive oil and add the onions, lower the heat to low and stir for 2-3 minutes.
Add the bay leaves, spices and peppercorns, vinegar and tomato paste, salt and pepper. Simmer and stir for about 15 minutes. There is no need to add water in the pan. If you feel like it, add a small espresso cup of water.
Add the chicken, stir and continue simmering for 30 minutes more.
Serve with fresh bread and a Greek salad!
