The following recipe is so simple and easy but with such a rich flavour. Lemony sauces are perfect with the fatty salmon. You can serve the dish with any side that you like, rice, salad, couscous, roasted potatoes or fries etc. I usually serve the fish with roasted herbed vegetable medley..
Ingredients
4 slices of salmon fillets
1/2 onion, finely chopped
1 carrot, sliced
1 potato cubes
1 stalk of celery choped
1 handful of chopped spinach
1 lemon, (juice)
4 tablespoons extra virgin olive oil
A spoonful of dill
Salt and Pepper
Directions
Heat some water in a kettle.
Using a skillet, saute in 2 tablespoons of olive oil the onion until soften and add carrot and celery, season and stir. Add the hot water. Put as much water as to cover the vegetables. Reduce heat and simmer until the vegetables soften. Transfer the vegetables to a blender and grind them. Return the puree to the skillet and add spinach and dill. Simmer the sauce until thicken. Turn off the heat add the lemon juice, stir and set aside.
Place the salmon on a baking sheet covered with parchment paper, season; drizzle some extra virgin olive oil and bake for 20 minutes (depending on the size of the fish).
Serve with the sauce; some fresh chopped chives and extra lemon juice if needed.
