Green Salad with Oyster mushrooms, walnuts and Graviera cheese

I love grilled Oyster mushrooms and the combination with walnuts and hearty Greek cheese is so delicious!

Ingredients


300 gr Oyster mushrooms
3 cups of salad greens, (baby spinach, arugula, rocket)
100 g graviera cheese, cut into thin strips (use the vegetable peeler)
1 handful walnuts
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
Salt and pepper


For the dressing

2 tablespoons extra virgin olive oil
The juice of half lemon
1 teaspoon mustard
1 teaspoon thyme honey



How to make

Preheat the oven to 350 degrees.
Rinse and wipe the mushrooms using a paper towel.
Cut and throw the stalks and hard parts. (You can keep them for a vegetable stock)
Grease a baking pan with a tablespoon of olive oil, add the mushrooms and sprinkle with a tablespoon of balsamic vinegar and another tablespoon of olive oil.
Add Salt and pepper and bake for 15-20 minutes or until browned (we don’t want them to get dry).
Using a salad bowl or platter, add the salad greens, mushrooms, cheese and nuts.
Whisk the dressing and pour all over the salad.

Notes
Graviera is a popular traditional Greek Cheese, if you cant find Graviera you can use Gruyere Swiss Cheese  which is similar to Greek Graviera.
