My friend Vicky sent me this recipe, it is a simple Fish recipe with great Greek ingredients.
Ingredients
1 white fish fillet (tilapia, cod etc) cut into chunks
3 small green onions, finely chopped
2 tablespoons rinsed capers
5 olives cut into slices
1 small onion or shallot finely chopped
1 teaspoon dill finely choped
60 ml white wine
3 cherry tomatoes cut in half
Olive oil, salt, pepper
Directions
Using a skillet in a medium to high heat, saute the green onions with some olive oil, add the shallot, capers, olives, tomatoes, add the wine, some salt and pepper and let it simmer for about 5 minutes. Place the fish into the skillet, stir all the ingredients together and cook for 5 minutes more. Sprinkle with dill and serve.
