Tender Potato salad with sundried tomatoes, green onions and lemon vinaigrette

 Who wants to stay inside a kitchen when the weather is too hot? Thank God for Barbeque and this salad can be the perfect side for steaks, burgers even fish. Simple and delicious!


Ingredients


4 medium potatoes cut into 4 pieces
3 pieces of sun dried tomatoes, cut into pieces
1 yellow bell pepper baked in the oven, peeled and cut into strips (You can use ready roasted red peppers in the jar)
6-8 chopped olives
4 fresh green onions cut into slices
Zest of half a lemon
1 teaspoon dried oregano
1 tablespoon parsley  chopped
Salt - Pepper


Vinaigrette

5 tablespoons extra virgin olive oil
The juice of one juicy lemon
1 teaspoon mustard
1 teaspoon thyme honey
Salt - pepper


Directions


Boil the potatoes over medium heat until soften. When they' re ready drain them and add salt and pepper.
Mix all salad ingredients in a shallow bowl, whisk in a glass all vinaigrette ingredients and drizzle the salad.
