Lemony Beef with sweet paprika and rice

So simple so easy and yet so delicious!


1 pound of stew beef
1 and a half cup basmati rice
1 large onion, chopped
4 tablespoons olive oil
1 bay leaf
Half a lemon (juice)
2 tablespoons white vinegar
1 tablespoon sweet paprika
Parmesan for serving
A little chopped parsley for serving
Salt - pepper


Using a large skillet sauté over medium-high heat beef with onion and bay leaf for about 5 minutes. Add the vinegar, lemon juice, paprika and stir. Add a cup of hot water, lower the heat, cover with lid and simmer the meat for 80 minutes.
When the beef is almost ready, turn up the heat again into medium high and add the rice with 2 cups of hot water and stir. When the food comes to a boil, lower the heat again and simmer for 10 to 15  minutes. If necessary, add some more hot water.
Once the food is ready, serve with grated cheese and sprinkle on top the chopped parsley.
