Layered Beet salad with yogurt sauce and balsamic vinegar

Pretty impressive salad, easy to make, light and simply delicious.


4 beets
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt and pepper
Yogurt Sauce
60 g feta cheese crumbled
1 full tablespoon soft goat cheese
½ cup of yogurt
1 garlic clove crushed


Rinse and peel the beets (you can use gloves to avoid colouring your hands). Boil them until they’re soft and you can pinch them with a fork. Let them drain and set aside to cool down. Cut them into slices.
Prepare the yogurt sauce by mixing together the cheeses with the yogurt and garlic.
Start to "build" the salad by placing on a plate a slice of beet, 1 tablespoon of the yogurt sauce, another beet slice on top and so on.
Drizzle on top some extra virgin olive oil, some balsamic vinegar and salt and pepper.

I've seen this recipe on a TV Show back in Greece hosted by  Myrsini Lambraki  the year  2007.
