Kids Favorite mini pies.
Ingredients
500 gr all purpose flour (you can also use if you want 250 gr whole wheat flour and 250 gr all purpose white flour)
2 teaspoons baking powder
1 cup of yogurt
Slightly more than ½ cup of olive oil
2 eggs
1 tablespoon of salt
1 teaspoon of sugar
200 g hard cheese grated (Parmesan)
300 g feta cheese crumbled
Directions
In a bowl sift the flour with a fine strainer. Add and mix the salt and sugar and then add the yogurt, one egg, the hard cheese, measure the oil using the cup of yogurt and add it to the mix.
Using a spoon stir all the ingredients together. Grease your hands with some olive oil and knead the dough until you have it soft and tender.
Prepare the filling by mixing together the feta cheese with an egg and some salt and pepper.
Take a small portion of dough and roll it with your fingers in your hand. Push it against your palm so you’ll have a round like little pizza dough.
Using a teaspoon put some of the filling in the centre of your little pie and fold it so it becomes like small half moon pie.
Place the pies on a greased baking plate (you can use parchment paper).
Brush the pies with some egg and bake them in preheated oven
at 350-380 F for 15-20 minutes depending on size ..
A few extra words
You can use any filling that you like, I've also made the mini pies with some ricotta cheese mixed with dill or with cheese and ham or with feta and mint etc..
I always use olive oil but you can use canola oil or any other oil that you like.
If you have left over dough you can use it to make a yummy crispy pizza. Just put the dough in the fridge and the next day or evening use it instead of pizza dough.
