Whole-wheat Carrot loaf with olive oil, raisins and walnuts

Ingredients


150 gr extra virgin olive oil
250 gr organic carrots graded
250 grams organic whole-wheat all purpose flour
4 beaten eggs
1 1 / 2 teaspoon baking powder
1 teaspoon cinnamon
1 / 2 teaspoon nutmeg
1 / 2 teaspoon ground cardamom
100 g raisins
100 g walnuts
6 tablespoons brown sugar
Icing sugar for dusting (optional)


How to make

Preheat the oven to 350.
Whisk using a fork the olive oil with the sugar, add the eggs, cinnamon, nutmeg, cardamom, raisings and walnuts. Add the carrots, stir  and start adding the flour with the baking powder.
Grease a loaf form and place the batter.


Bake for 30 minutes; lower the oven to 300 degrees and continue for 30 more minutes.
