This is one of my favorite appetizer recipes, very common in Greece, especially when you’re sitting by the sea with friends drinking Ouzo!
700 g large or medium shrimp
1 can of diced tomatoes
1 tablespoon of tomato paste dissolved in a glass (250 ml) of water
1 onion minced
40 ml ouzo (Greek alcohol drink) You can use 100 ml of white wine instead
150 g Feta cheese in chunks or cubes
100 grams mozzarella
1 tablespoon chopped parsley
1 tablespoon mint
4 tablespoons olive oil
Oregano, salt and pepper
Directions
Using a skillet in medium heat saute the onion with some olive oil until golden brown. Add the ouzo, the diced tomatoes and the glass of water glass. Add some Salt and pepper lower the heat and let the sauce simmer for about 45 minutes.
Preheat the oven to 350.
Place in an ovenproof dish the cleaned and without shells shrimps (you can leave the tail). Add feta cheese, oregano, salt and pepper. Pour the sauce into the pan to cover the ingredients. Finally cut into slices of mozzarella thinly and place over sauce. Bake for 30 minutes and when it’s ready sprinkle with fresh parsley and mint.
