Delicious Mushroom Pie

This is a pie that will blow your mind. My friends and family loves it, I hope you will too!


Ingredients


500 g fresh white mushrooms cut into  slices
1 handful of finely chopped dill
1 handful of finely chopped parsley
4-5 fresh green onions finely chopped
1 - 2 stalks of  leek (only the tender white part) finely chopped
3 tablespoons olive oil
2 tablespoons lemon juice
250 grams grated cheese (Edam, Gouda, mozzarella, mixed cheeses)
1 cup of milk or cream
3 eggs plus 1 extra for coating the pie
3 tablespoons breadcrumbs
1 package butter puff pastry
2 teaspoons sesame seeds

Directions


Let the puff pastry unopened in room temperature for an hour or two
In a skillet, heat two tablespoons of olive oil, add the leeks and onions and cook for about 2 minutes. Add the mushrooms, sprinkle the dill and parsley, add some salt and pepper and toss them all together. Add the lemon juice and continue cooking for about 5 minutes more.  Remove the skillet from heat and set aside to cool down.
In a bowl whisk 3 eggs with the cup of milk and add the mixed cheese.
Combine all the ingredients together and stir.
If needed, roll the one puff pastry sheet in a flour powdered surface (so it can fit your pan) and place it in a non stick baking pan (or grease the pan with one tablespoon of olive oil -  you can also use a parchment paper).  Add the filling and place the second puff pastry sheet to seal the pie (don’t forget to roll the second pastry sheet also so it can fit your pan). Just fold in the edges using a fork. Cut the pie into serving pieces; brush with one beaten egg and sprinkle on top some sesame seeds.
Bake the pie for 40 - 50 minutes or until golden.
Remove from the oven and let it cool for 15 minutes before serving.
