Green Salad with Baked Feta Cheese and Pita Croutons




Hello there friends! So my son started JK last week and I already feel that our daily program is upside down! The good thing is that he just loves his teacher and every day he’s more than excited to go.  I’m really happy for him.
So while I'm crawling back into my routine, I have a delicious green salad today for you, the baked cheese in foil is just amazing and compliments wonderfully the salad. Baked feta in foil is a standard appetiser (mezes) in every restaurant in Greece, the cheese gets gooey with nutty salty flavor, divine!

Ingredients

For salad
1 bowl of fresh mixed greens (rocket, lettuce, radicchio, etc.)
1 cup cherry tomatoes cut in half
6-8 Kalamata olives into slices
1/2 red onion, sliced
some fresh basil leaves 
For the baked feta
1 piece of cheese 150 – 170 gr 
2-3 cherry tomatoes or 1/3 tomato sliced
1 small hot pepper sliced
oregano
little olive oil
For the vinaigrette
3 tablespoons olive oil
1 teaspoon Dijon mustard
1 teaspoon honey
1 tablespoon balsamic vinegar
salt - pepper


How to make

Preheat oven to 420 degrees, cut a piece of aluminum foil considerably larger than the piece of cheese, drizzle with olive oil add the tomatoes, chili, oregano and close the foil.



Bake for 20 minutes, remove from the oven, turn to broil, open the top of the foil and continue broiling for few minutes more until slightly golden brown.



At the same time prepare the croutons, cut the pita bread into 8 triangles, brush them with a little olive oil, sprinkle with oregano, add a little salt and bake in the oven for 2-3 minutes until golden brown and crisp.
Using a small cup mix all the ingredients for the vinaigrette and set aside.
Using a bowl add the mixed greens, stir and add the croutons. When you are ready to serve, add the hot from the oven baked Feta cheese, drizzle with the vinaigrette, and serve immediately.
