Spanish Olive Oil Cookies ( Tortas De Aceite)





Hi there!
I know it's been a while, I missed all your recent posts but I will try to make it up to you this week..! 
Now it's time for another Mediterranean recipe; Tortas De Aceite are very famous in Spain and you can find them in every food shop in this amazing Country. These large, fragrant, sweet cookies - biscuits look like a biscuit pancake and they have been made for over 100 years in the region of Seville.
 It's easy to make them at home so.. lets head to the recipe

Ingredients (12-14 large cookies)


2 teaspoons active dry yeast
1/2 cup extra virgin olive oil
3 tablespoons brown or white sugar and a little more for sprinkling at the end
2/3 cup warm water (not hot, as warm as bath water for a baby)
1 cup flour type 00 or cake flour
1 teaspoon salt
2 teaspoons fennel seeds or anise seeds
1 tablespoon sesame seeds
Caster sugar
1 egg white

How to make

Using a bowl, add the warm water, olive oil, sugar and yeast. Leave for 5 minutes aside to activate the yeast. Your mixture should be foamy after 5 minutes.
 Using another bowl mix the flour with the salt, sesame seeds and fennel seeds. Form a well in the center of the flour mixture and slowly pour the liquid yeast mixture stirring with a spoon. Allow the mixture to rise for  30 - 45 minutes (do not add more flour).
Cover a baking tray with parchment paper and sprinkle 1 tablespoon icing sugar using a strainer.
When the dough has doubled in size press with your finger to deflate and overturn the dough to a floured surface. Also flour a rolling pin or bottle.
Preheat the oven to 450 F.
Divide the dough into 12 -14 equal-sized pieces and roll out each piece until it’s about 4 inches in diameter. Lay them on your trays and brush with the egg white. Sprinkle with icing sugar and then with regular sugar.

 Bake for 10 -12 minutes until golden and crisp. Transfer to wire racks to cool.
