Greek Easter Cookies!



 The time is now! I've been busy again, I'm sorry for that I didn’t have the chance to visit your blogs these days. I promise I will, I honestly enjoy reading your posts.
So Easter is here and today I'm giving you the recipe for Greek Easter Cookies. They are easy and fun to make, so don’t hesitate and don’t worry about it.

Ingredients (for about 35 - 40 pieces)

200 g butter at room temperature
1 cup granulated sugar
2 egg yolks
The juice of one orange
1 tablespoon vanilla extract
2 cups all-purpose flour
1/2 cup whole wheat flour
1 tablespoon cornmeal
1/3 teaspoon salt
1 teaspoon baking powder
1/3 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon mahleb
For coating at the end
2 tablespoons milk
1 egg yolk

How to make

Using a bowl combine together the flours, cornmeal, salt, baking powder, cinnamon, mahleb and soda.
Place the butter with the sugar in a mixer bowl and beat in medium speed until the mixture is smooth and fluffy.
Add the egg yolks, orange juice, vanilla and mix for about 30 seconds more.
Gradually add the flour mixture into the wet mixture until you have a soft and smooth dough.


Cover with plastic and place in the fridge for at least 30 minutes.
When you are ready to make the shapes and form the cookies, preheat the oven to 350 degrees and cover a pan with parchment paper.
Divide the dough into two portions and place one in the fridge.
Take a portion of dough in the size of a whole walnut and roll it into a size of pencil rope.
Bring the edges toward you and twist or braid the ends to form this shape.



The other traditional shape is formed by placing together 3 little ropes and pressing the edges to almost form a little boat.



And in the last one, you just roll a rope and enfold it like you see on the picture.



Place the cookies in the pan (leave some place between them), coat them with the egg and milk mixture and bake 15 - 20 minutes.
Continue with the second piece of dough that you have in the fridge.
