Tunna Salad with cucumber ribbons, olives and radish

This salad is perfect for dinner if you follow a low calorie diet.
Christmas are almost near and so are the hearty family feasts. I think that now is a good time to start a low calorie, healthy nutrition program.. Well at least that's what I'm doing for a little while just before huge holidays.. 
This crunchy tuna salad fulfilled my expectations of having a low calorie yet tasty meal!



Ingredients

1 can tuna in water
1 cucumber
1 piece of dried tomatoes (whole)
3 olives, pitted and chopped into small pieces
2 radishes cut into thin slices
1 tablespoon olive oil
1/2 teaspoon red wine vinegar
Oregano or a little chopped dill, pepper

How to make

Drain the tuna and place in bowl. Clean and peel the cucumber into ribbons. Discard the seeds.
Keep some ribbons aside to roll them and decorate the salad.
Rinse and patted dry the tomatoes.Cut into small pieces.
Using a bowl salad add the cucumber, sun-dried tomatoes, tuna, radishes, olives. Toss them together and add the olive oil, the red wine vinegar and the oregano. Decorate with cucumber rolls and serve.
You can add some whole wheat croutons if you like.
